Ingredients
2 pieces of garlic; 1 Tbsp olive oil; Pepper; 1/2 cup cashews; 1/2 cup water; 1 Tbsp nutritional yeast
Instructions
1. Bring some water to a boil and soak the cashews (unless you've already soaked over night in tepid water). 2. Quickly pan fry the garlic in olive oil for 1-2 minutes. 3. Peel the garlic and add it to a blender. 4. Season with salt, pepper, and nutritional yeast. 5. Strain the soaked cashews to the blender with a generous pinch of salt and pepper and nutritional yeast and add back 1/2 cup of fresh filtered water. 6. Drizzle in some olive oil and blend on high until the mixture is liquified. 7. Heat the sauté pan to medium. 8. Transfer the blended mixture to the sauté pan. 9. Stir frequently until the sauce thickens to a mayo-like consistency. Turn off the heat. (Optional: Add a Tbsp or two of cassava or tapioca flour if the mixture is taking too long to thicken.) 10. Use immediately in recipes such as vegan lasagna or any dish requiring a bechamel-style sauce.
