Ingredients
2 cups oat milk; 2 cups water; 1 1/2 cups polenta; 1 teaspoon fine grain sea salt; 1/2 cup silken tofu or lentil tofu; 1/4 cup olive oil; 3 Tbsp nutritional yeast
Instructions
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. 2. In a large saucepan, combine the oat milk, water, and sea salt, and bring to a boil over medium-high heat. 3. Gradually whisk in the polenta, reducing the heat to low. Continue stirring frequently for about 15-20 minutes, or until the polenta thickens and pulls away from the sides of the pan. 4. Stir in the silken tofu and nutritional yeast, mixing well until smooth and well combined. 5. Pour the polenta mixture into a greased or parchment-lined baking dish, spreading it evenly. Allow it to cool completely and set for about 1 hour. 6. Once set, cut the polenta into fry-shaped pieces. Arrange the fries on the prepared baking sheet. 7. Drizzle the polenta fries with olive oil, tossing to coat. Arrange them in a single layer without overlapping. 8. Bake for 30-35 minutes, flipping halfway through, until the fries are golden brown and crispy. 9. Serve hot with your favorite dipping sauce or as a side dish to your main meal.
