Ingredients
2 large bananas, 1 cup oatmeal, 1/4 cup vegan semi-sweet chocolate chips, 1/2 teaspoon cinnamon, 1/2 teaspoon vanilla extract, 1/4 cup shredded coconut, 1/4 cup chopped nuts, 2 tablespoons almond nut butter, 1 tablespoon maple syrup.
Instructions
1. Preheat the oven to 350F (175C) and line a baking sheet with parchment paper. 2. In a large bowl, mash the bananas until smooth. 3. Add the oatmeal, vegan chocolate chips, cinnamon, vanilla extract, shredded coconut, chopped nuts, almond nut butter, and maple syrup. Mix until well combined. 4. Scoop the mixture onto the prepared baking sheet, flattening slightly with the back of a spoon. 5. Bake for 12-15 minutes, or until the cookies are golden brown. 6.
