Ingredients

6 tablespoons vegan butter, at room temperature, plus extra for greasing; 1 1/2 cups all-purpose flour; 1 1/2 teaspoons baking powder; 1/2 teaspoon table salt; 1 cup plus 2 tablespoons granulated sugar; 1 large flax egg (1 tablespoon flaxseed meal + 2.5 tablespoons water); 1/2 cup plant-based milk; 1 teaspoon vanilla extract; 1 pint blueberries.

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease a pie plate with vegan butter or line with parchment paper. 2. In a medium bowl, whisk together the flour, baking powder, and salt. 3. In a large bowl, cream the vegan butter and sugar until light and fluffy. Add the flax egg, plant-based milk, and vanilla extract, mixing until well combined. 4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Gently fold in the blueberries. 5. Pour the batter into the prepared pie plate and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. 6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
