Ingredients
1 small cauliflower, cut into medium-small florets; 150 g cassava flour; 200 ml cold water; 1 tsp salt; 1 tsp maple syrup; ¼ tsp paprika or chili powder (optional); ¼ tsp black pepper; 4 cloves garlic, skin intact; vegetable oil for frying; 1 Tbsp nutritional yeast; 1 Tbsp ground flaxseed
Instructions
1. Preheat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C). 2. In a mixing bowl, whisk together 100g of cassava flour and cold water to create a smooth batter. Let the batter rest for 5 minutes. 3. In a separate bowl, combine the remaining cassava flour, salt, maple syrup, paprika or chili powder (if using), black pepper, nutritional yeast, and ground flaxseed to create a dry mix. 4. Add the garlic cloves with skin intact into the hot oil and fry until golden and crispy. Remove the garlic and set aside. 5. Dip the cauliflower florets into the batter, allowing excess batter to drip off. 6. Roll the battered cauliflower florets in the dry flour mixture until fully coated. 7. Dip the florets back into the batter for a second coat and then back into the dry flour mix to double batter them. 8. Carefully place the double-battered cauliflower florets into the hot oil, frying in batches if necessary to avoid overcrowding the pot. Fry until the cauliflower is golden and crispy, about 3-5 minutes per batch. 9. Remove the cauliflower from the oil using a slotted spoon and place on a paper towel-lined plate to drain excess oil. 10. Serve hot as a delicious appetizer or snack.
