Ingredients

1/2 cup tahini, unsalted and smooth; 1/2 cup maple syrup; 1 1/4 cup almond flour; 3/4 cup tapioca starch; 1/2 tsp baking soda; 1/2 tsp sea salt; 1/4 cup raw sesame seeds

Instructions

Preheat the oven to 350 F (176 C) and line a baking sheet with parchment paper. In a medium mixing bowl, whisk together the tahini and maple syrup. Add the almond flour, tapioca starch, baking soda, and sea salt to the tahini mixture and mix well. Place the sesame seeds in a small bowl. Scoop the dough with a tablespoon or small cookie scoop, roll into balls, then roll in sesame seeds. Place on the baking sheet and flatten slightly. Bake for 12-15 minutes until golden. Let cool for 5 minutes before enjoying. Store leftovers at room temperature for 3-4 days, or freeze for up to 1 month.
