Ingredients
1 \/u00bd pounds sweet potatoes (2 medium or 3 small), 1\/2 cup quinoa, rinsed, 1 cup water, 1 can (15 ounces) black beans, rinsed and drained, 1\/2 cup chopped red onion, 1\/3 cup chopped fresh cilantro, 2 cloves garlic, minced, 2 tablespoons adobo sauce or 2 teaspoons smoked paprika, 2 teaspoons ground cumin, 1 teaspoon chili powder, 1\/2 teaspoon salt, 1 \/u00bc cups quick-cooking oats, Extra-virgin olive oil, for brushing, 8 whole wheat hamburger buns (optional), Your favorite burger fixings: Avocado, tomato, onion, lettuce, pickles, sprouts, ketchup, hot sauce, mustard.
Instructions
1. Preheat the oven to 400\u00b0F (200\u00b0C). Roast sweet potatoes until tender, about 30-35 minutes. Let cool, then peel and mash. 2. Cook quinoa in 1 cup of water until fluffy, about 15 minutes. Set aside. 3. In a large bowl, combine mashed sweet potatoes, quinoa, black beans, red onion, cilantro, garlic, adobo sauce, cumin, chili powder, salt, and oats. Mix well. 4. Form mixture into 8 patties. Brush with olive oil and bake on a greased tray for 20 minutes, flipping halfway. 5. Serve on whole wheat buns with your favorite fixings like avocado, tomato, onion, and lettuce.
