Ingredients
3 tbsp olive oil, plus extra for the tin and for drizzling; 1 celery stick, finely chopped; 2 leeks, halved and sliced; 100g cooked quinoa; 3 tbsp za'atar; 50g fresh breadcrumbs; 100g green lentils; 6 pieces figs; 20mg dry blueberries; 20mg dry raspberry; 20mg dry grapes; 1 tsp dry oregano; 1 tsp dry mint; 1 tsp sage; 1 white onion; 20mg crushed walnuts; 20mg cashew; 20mg almonds; 100g cannellini beans, mashed; 100g vegan feta cheese, crumbled.
Instructions
1. Preheat the oven to 180C (350F). Grease a loaf tin with olive oil and line with parchment paper. 2. Heat 3 tbsp of olive oil in a large pan over medium heat. Add the celery, leeks, and onion, and cook until softened. 3. In a large bowl, combine the cooked quinoa, za'atar, breadcrumbs, lentils, figs, dried berries, herbs, nuts, mashed cannellini beans, and crumbled vegan feta. Mix well. 4. Transfer the mixture to the prepared loaf tin, pressing down firmly. Drizzle with a little extra olive oil. 5. Bake for 45-60 minutes, or until golden brown and firm to the touch. 6. Let cool slightly before slicing. Serve with a side of roasted vegetables or a fresh salad.
