Ingredients

2 teaspoons olive oil; 3 baby round zucchinis or one large regular zucchini, sliced; 2 small red onions, sliced; 1 cup shitake mushrooms, diced (or a combo of shitake and oyster); 3 garlic cloves, minced; 1/2 cup loosely packed basil leaves, chopped; Salt and pepper to taste; 1 cup vegan cream (or 1/2 oat milk and 1/2 coconut milk); 1 tsp chili flakes; 1/2 tsp turmeric; 1 tsp sweet paprika; Bread crumbs (optional, for topping)

Instructions

Preheat oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat. Add sliced zucchini and cook until lightly browned. Add sliced red onions and cook until softened. Stir in diced mushrooms and minced garlic, cook for another 2-3 minutes. Add chopped basil leaves, salt, and pepper. In a separate bowl, mix vegan cream, chili flakes, turmeric, and sweet paprika. Pour the cream mixture over the vegetables and stir well. Transfer the mixture to a baking dish. Sprinkle with bread crumbs if using. Bake for 20-25 minutes, until the top is golden and bubbly. Serve hot.
