Instructions
1. Preheat your oven to 350F (175C) and line an 8x8-inch baking dish with parchment paper. 2. In a large bowl, combine all the dry ingredients: granulated sweetener, oat flour, dairy-free chocolate chips, cocoa powder, baking powder, baking soda, salt, and instant coffee powder. 3. In a separate bowl, mix the wet ingredients: shredded zucchini, nut butter, plant-based milk, and vanilla extract until well combined. 4. Add the wet ingredients to the dry ingredients and mix until a thick batter forms. 5. Pour the batter into the prepared baking dish and spread it evenly. Top with additional dairy-free chocolate chips if desired. 6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean. 7. Allow the brownies to cool in the pan before slicing and serving.
