Ingredients
2 cups old-fashioned oatmeal, 1 cup sliced almonds, 1 cup shredded coconut (unsweetened), 1/2 cup toasted wheat germ, 2/3 cup maple syrup or agave nectar, 1 1/2 teaspoons pure vanilla extract, 1/4 teaspoon kosher salt, 1 1/2 cups dried fruit mix (chopped apricots, cranberries, raisins), 1 heaping cup packed dates (pitted), 1/4 cup creamy salted natural peanut butter or almond butter.
Instructions
1. Preheat your oven to 350°F. Butter an 8×12-inch baking dish and line it with parchment paper. 2. Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ. Reduce the oven temperature to 300°F. 3. While the mixture is still warm, stir in the maple syrup or agave nectar, vanilla, and salt until the mixture is well coated, then add the dried fruit. Pour the mixture into your prepared baking dish and press it in using wet fingers or a silicone spatula until packed tightly. 4. Bake for 25 to 30 minutes, until light golden brown. Cool for 2 to 3 hours before cutting into squares with a serrated knife. 5. Store in an airtight container at room temperature for a week or two, or in the freezer to maintain crispness.
