Ingredients

1 can young jackfruit, drained and shredded; 3/4 cup olive oil; 1/4 cup balsamic vinegar; Salt and freshly ground black pepper; 220g mixed salad greens; 1/4 cup pecans, chopped; 6 medium strawberries, hulled and quartered; 1 green onion, sliced (white and light green parts); 110g vegan feta cheese, crumbled; 4 large gluten-free tortillas

Instructions

1. Prepare the balsamic vinaigrette by whisking together olive oil, balsamic vinegar, salt, and pepper in a small bowl. Set aside. 2. Preheat a grill or grill pan. Toss the shredded jackfruit with a portion of the vinaigrette to coat. Grill the jackfruit until slightly charred and heated through, about 5 minutes. 3. In a large bowl, combine mixed salad greens, pecans, strawberries, green onion, and grilled jackfruit. Add the remaining vinaigrette and toss to coat. 4. Place an equal amount of the salad mixture down the middle of each tortilla. Sprinkle with crumbled vegan feta cheese. 5. Roll up the tortillas, slice in half, and serve immediately.
