Ingredients
1 cup arborio rice; 3 - 4 cups vegetable broth; 1/2 onion, chopped; 3 shallots, chopped; 3 cloves garlic, whole; 2 cups mushrooms, sliced; 1/2 cup white wine; 1 cup spinach (or nero cavolo); 2 Tbsp dried seaweed (dashi kombu), finely chopped; 1/4 cup nutritional yeast; 2 Tbsp olive oil; 1/2 tsp sweet paprika; 1 tsp Italian herbs; 1/2 tsp chili flakes; 1/4 tsp tumeric; Salt and pepper to taste;(opt) truffle oil;(opt) fresh parsley
Instructions
1. Sauté onion and shallots and whole garlic cloves (with skins) and olive oil in a pan until translucent. 2. Add mushrooms and cook until browned. 3. Deglase pan with wine. 4. Stir in rice and toast gently for 1 or 2 mintutes while stiring. 5. Reduce heat to medium-low. 6. Slowly add hot broth 1/2 cup at a time, allowing the rice to absorb it gradually. 7. Once cooked, stir in spinach, seaweed and nutritional yeast. 8. Serve with a drizzle of truffle oil and/or fresh parsley sprig.
