Ingredients

2 tablespoons olive oil, 5 cloves garlic minced, 1 1/2 cups cut green beans, 15 oz can butter beans, drained and rinsed, 1 cup artichoke hearts quartered, frozen or canned, 3 medium tomatoes diced, about 2 cups, 2 teaspoons smoked paprika, 1 teaspoon saffron threads, 1 1/2 teaspoons salt, 6 cups vegetable broth, 2 1/2 cups bomba rice. Garnish: lemon slices, flat leaf parsley chopped.

Instructions

1. Heat olive oil in a large paella pan or skillet over medium heat. Add the minced garlic and cook until fragrant. 2. Add the green beans, butter beans, artichoke hearts, and diced tomatoes. Stir in the smoked paprika, saffron threads, and salt. 3. Pour in the vegetable broth and bring to a boil. Add the Bomba rice and stir to combine. 4. Reduce the heat to low and simmer, uncovered, for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed. 5. Garnish with lemon slices and chopped parsley before serving.
