Ingredients

250g mushrooms, 500g fresh gnocchi, 3 tbsp olive oil, plus extra for drizzling, 160g bag spinach, 100g vegan blue cheese

Instructions

1. Preheat the oven to 200C (390F). 2. Toss the mushrooms with olive oil, salt, and pepper, and spread them on a baking sheet. Roast for 15 minutes. 3. Cook the gnocchi according to package instructions, then drain. 4. In a large skillet, heat the remaining olive oil over medium heat. Add the spinach and cook until wilted. 5. Add the roasted mushrooms, gnocchi, and crumbled vegan blue cheese to the skillet. Stir until the cheese is melted and everything is well combined. 6. Serve hot, drizzled with extra olive oil if desired.
