Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper. 2. In a large bowl, toss cauliflower florets with olive oil, taco seasoning, lime juice, salt, and pepper until evenly coated. 3. Spread cauliflower on the prepared baking sheet and roast for 25-30 minutes, turning halfway, until tender and slightly crispy. 4. While cauliflower is roasting, prepare the mango salsa by combining diced mango, red onion, jalapeño, lime juice, cilantro, and salt in a bowl. Mix well and set aside. 5. Warm the black beans in a small saucepan over medium heat for 5 minutes, adding a splash of water if needed. Season with salt and pepper to taste. 6. Warm tortillas in a dry skillet over medium heat or wrap in foil and warm in the oven for 5 minutes. 7. Assemble tacos by placing roasted cauliflower and black beans on each tortilla.
