Ingredients

2 packages ramen noodles (use 2 noodles plus 1-2 packages of seasonings, to taste), 1 cup shiso leaves, 1 cup Thai basil (divided, some for garnish), 5 garlic cloves, 2 tablespoons pine nuts, 1/2 cup bonito flakes (vegan alternative), Salt, to taste, 1/2 cup extra virgin olive oil, 3/4 lb chickpeas (cooked or canned), 1 cup shredded carrot, 2 green onions (cut diagonally into 1" pieces)

Instructions

1. To make the pesto, in a food processor, combine shiso leaves, Thai basil, garlic, pine nuts, half the vegan bonito flakes, salt, and olive oil. Pur�e until smooth. 2. Cook ramen noodles according to package directions, without adding the seasoning packets. Drain and set aside. 3. In a large mixing bowl, combine cooked noodles, chickpeas, shredded carrot, green onions, seasoning packets to taste, and the prepared pesto. Toss to combine. 4. Plate and garnish with remaining vegan bonito flakes and a few basil leaves. Serve immediately.
