Ingredients

1 cup red lentils; 1 large onion, chopped; 6 garlic cloves, minced; 1 red or yellow capsicum, chopped; 1 carrot, chopped; 1-2 tbsp Thai red curry paste; 1.7l vegetable stock; 200ml coconut milk; 1 small chili pepper, chopped; 1 lemon, juiced; Ground cumin; Black pepper; Salt; Chopped parsley; Chopped spring onions, to serve (optional)

Instructions

Heat olive oil in a large pot over medium heat. Add the chopped onions, garlic, and chili pepper, sautéing until onions are translucent. Stir in the Thai red curry paste and cook for another minute. Add the chopped capsicum and carrot, and sauté for a few minutes. Pour in the red lentils, vegetable stock, and bring to a boil. Reduce heat and simmer for 30 minutes, or until lentils are tender. Stir in the coconut milk and lemon juice, and season with ground cumin, salt, and pepper. Cook for an additional 15 minutes. Serve hot, garnished with chopped parsley and optional spring onions.
