Ingredients
1 pound sweet potatoes (about 2 medium), scrubbed and cut into 1-inch cubes; 1 ½ teaspoons extra-virgin olive oil; ¼ teaspoon kosher salt; ⅛ teaspoon ground pepper; 1/2 cup Cashew Dressing (see Associated Recipes); 6 cups chopped curly kale; 2 cups marinated tempeh, grilled or baked; ¼ cup chopped unsalted cashews.
Instructions
1. Preheat the oven to 425°F (220°C). Toss the sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned. 2.
