Ingredients

2 to 3 sweet potatoes (1 1/2 pounds), peeled and cut into 2-inch chunks; 75g vegan dough (chia egg mixed with 50g GF flour); 1/3 cup plus 1/2 cup packed light-brown sugar; 3 tablespoons pure maple syrup; 1/4 teaspoon kosher salt; 1/2 teaspoon ground cinnamon; 1/4 teaspoon ground nutmeg; 3/4 cup plus 1 tablespoon oat milk; 1 prebaked gluten-free pie crust, or 1 frozen store-bought (9-inch) gluten-free crust; 3 tablespoons vegan butter; 1 cup pecans, broken into pieces.

Instructions

1. Preheat oven to 350°F (175°C). Boil sweet potatoes until tender, about 20 minutes. Drain and mash. 2. In a large bowl, combine mashed sweet potatoes, chia egg mixture, 1/3 cup brown sugar, maple syrup, salt, cinnamon, nutmeg, and oat milk. Mix until smooth. 3. Pour the sweet potato mixture into the prebaked or store-bought gluten-free pie crust. 4. In a separate bowl, mix pecans, 1/2 cup brown sugar, and melted vegan butter. Sprinkle on top of the pie. 5. Bake for 35-40 minutes, or until the topping is golden and the filling is set. Let cool before serving.
