Ingredients

2 ounces (55g) red onion, thinly sliced; 1/4 cup (60ml) red wine vinegar; 12 ounces (340g) mixed ripe tomatoes, cut into slices and chunks; 12 ounces cucumber (340g), peeled and sliced; 1/4 cup pitted Kalamata or other briny black olives; 1/2 cup (120ml) extra-virgin olive oil, plus more for drizzling; Kosher or sea salt; 2 big pinches dried Greek or Mediterranean oregano, divided; 4 ounces (115g) homemade vegan feta.

Instructions

1. In a large bowl, combine the sliced red onion and red wine vinegar. Let it sit for 10 minutes to mellow the onion's flavor. 2. Add the tomatoes, cucumber, olives, olive oil, salt, and oregano to the bowl. Toss gently to combine. 3. Gently fold in the homemade vegan feta. 4.
