Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan. 2. In a large bowl, combine the whole wheat flour, soy flour (if using), flax seed meal, salt, ground cinnamon, ground cloves, and baking soda. 3. Add the grated carrots, brown sugar, vanilla extract, and hot water to the dry ingredients. Mix well until all ingredients are combined. 4. Fold in the dried currants, slivered almonds, and tapioca starch (if using) until evenly distributed. 5. Pour the batter into the prepared baking pan and spread evenly. 6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. 7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. 8.
