Instructions
1. **For Dry Beans**: Soak the white beans overnight in a large bowl of cold water. On the day of cooking, drain and rinse the beans, then place them in a large pot with half the chopped onions, garlic, and enough water to cover them. Bring to a boil and cook for 20 minutes. Set aside. 2. **For Canned Beans**: Drain and rinse the canned beans and set them aside. Begin with Step 3. 3. In a large pot, heat olive oil. Brown the vegan sausages and set them aside. 4. Add the remaining onions, carrot, vegan pork or jackfruit, and vegan duck to the pot and cook for 15 minutes until browned. 5. Add the white beans, bay leaf, bouquet garni, and tomato paste. Cover and cook for 30 minutes. 6. Add the vegan sausages back into the pot, add enough water to cover the mixture, and simmer for another hour. Adjust the seasoning and serve hot.
