Ingredients
3 medium zucchini (courgette), grated; 150 g / 6 oz vegan feta cheese, crumbled; 1/2 medium onion, finely chopped; 3 green (spring) onions, finely chopped; 3 garlic cloves, finely chopped; 1 bunch dill, finely chopped; 2 flax eggs (2 tablespoons ground flax seeds + 4 tablespoons warm water); 45 ml / 3 tablespoons gluten-free flour; Pinch of paprika (optional); Salt and ground black pepper to taste; Sunflower or vegetable oil for shallow frying; Sprigs of onions and dill for garnish
Instructions
1. Place the grated zucchini in a colander, sprinkle with a little salt, and leave to drain for 30 minutes. 2. Crumble or grate the vegan feta cheese. 3. Using a tea towel, squeeze out any excess water from the zucchini and put it in a bowl. 4. In a large bowl, combine the gluten-free flour and flax eggs (flaxseed mixed with warm water). Add the zucchini, vegan feta cheese, chopped onion, green onions, garlic, dill, and paprika. Season with salt and pepper to taste, and mix well to form a batter. 5. In a frying pan, heat enough oil to shallow fry. Using a tablespoon, drop spoonfuls of the batter into the hot oil. Fry over medium heat on both sides until golden brown. 6. Remove the fritters with a slotted spoon and drain them on absorbent kitchen paper towels. 7. Serve warm or cold as a meze, garnished with sprigs of dill and spring onions. Enjoy with garlic-infused vegan yogurt if desired.
