Ingredients

4 leeks, trimmed and finely chopped; 25g vegan butter; 100g cauliflower and cashew mornay sauce; 6 sheets gluten-free filo pastry; 2 vegan salmon fillets or seaweed-marinated sundried tomatoes; Salt and pepper to taste.

Instructions

1. Preheat the oven to 180C (350F). In a pan, melt the vegan butter and saut\u00e9 the chopped leeks until soft. 2. Mix the saut\u00e9ed leeks with the cauliflower and cashew mornay sauce. Season with salt and pepper. 3. Place a vegan salmon fillet or a portion of seaweed-marinated sundried tomatoes on each sheet of filo pastry. 4. Add a generous spoonful of the leek and mornay mixture on top. 5. Fold the pastry to form parcels and place them on a baking sheet. 6. Bake in the oven for 25-30 minutes or until the pastry is golden and crisp. 7. Serve hot with a side salad or steamed vegetables.
