Ingredients
4 dried morels, 1 small onion, finely chopped, 2 cloves garlic, 2 tbsp olive oil, 1/2 lb domestic mushrooms, sliced, 1/2 lb gluten-free pasta, Italian parsley, chopped, Salt and pepper, 2 medium leeks, thinly sliced, 1 tbsp white miso, 1 tbsp sherry vinegar, Nutritional yeast for garnish
Instructions
1. Rehydrate the dried morels in hot water for 20 minutes, then drain and chop. 2. Bring a large pot of salted water to a boil. 3. Heat olive oil in a large skillet over medium heat. Add the chopped onion, garlic, and leeks, cooking until softened. 4. Add the sliced mushrooms and rehydrated morels, seasoning with salt and pepper. Cook until mushrooms are browned. 5. Cook the pasta according to package instructions, reserving 1 cup of pasta water. 6. Stir the white miso into the reserved pasta water. Add it to the skillet with the cooked pasta and mushrooms, stirring to form a creamy sauce. 7. Add sherry vinegar and chopped parsley, adjusting seasoning as needed. Serve garnished with nutritional yeast and a drizzle of olive oil.
