Ingredients
1 tbsp chili powder, 2/3 cup lime juice, 2 tbsp olive oil, 1 lb jackfruit (canned, rinsed, and shredded), 3/4 cup vegan Greek yogurt, 1 clove garlic, minced, 1 lb plum tomatoes, seeded and chopped, 1 small red onion, sliced, 6 kalamata olives, pitted and quartered, 2 tbsp finely chopped fresh oregano, 24 leaves radicchio, 12 leaves butter lettuce, 2 scallions, sliced.
Instructions
1. Preheat the oven to 400°F (200°C). In a large bowl, combine chili powder, lime juice, olive oil, vegan Greek yogurt, and minced garlic. Mix well. 2. Add the shredded jackfruit to the bowl and toss until well coated with the marinade. 3. Spread the marinated jackfruit on a baking sheet lined with parchment paper. Bake for 15 minutes, or until the jackfruit is lightly browned and heated through. 4. In a separate bowl, combine the chopped tomatoes, sliced red onion, kalamata olives, fresh oregano, and scallions. Toss with a little lime juice and olive oil. 5. Assemble the wraps by placing a few leaves of radicchio and butter lettuce on each tortilla. Add a generous portion of the baked jackfruit and top with the tomato-onion mixture. 6. Serve immediately, garnished with extra lime wedges and a dollop of vegan Greek yogurt if desired.
