Ingredients

[ "3 cups dried gluten-free macaroni", "3 cups vegetable broth", "3 cups water", "3 garlic cloves, minced", "1/2 red onion, chopped", "1 tablespoon Italian herbs", "1 teaspoon pepper", "1/2 teaspoon cayenne pepper", "1/2 teaspoon kala namak (black salt)", "3 tablespoons olive oil", "1/2 teaspoon chili flakes", "1 tsp paprika", "1 cup Alfredo Got a Halo Sauce (see internal recipe)", "1 tablespoon ground flaxseed", "Almond milk, as needed", "Cassava flour, as needed", "Gluten-free panko breadcrumbs, as needed", "Oil for deep frying", "Salt, to taste" ]

Instructions

1. Cook the gluten-free macaroni in vegetable broth and water as per package instructions, then drain and set aside. 2. In a large pan, heat olive oil over medium heat. Add the chopped garlic, onion, Italian herbs, pepper, cayenne, paprika, and chili flakes. Sauté until the onions are soft and fragrant. 3. Stir in the Alfredo Got a Halo Sauce and cooked macaroni. Mix well to combine and cook for an additional 2-3 minutes. 4. Transfer the mac 'n' cheese mixture to a large bowl and let it cool slightly. 5. Prepare three bowls for breading: one with cassava flour, one with almond milk, and one with gluten-free panko breadcrumbs. 6. Scoop out portions of the mac 'n' cheese mixture and roll into balls. 7. Roll each ball in cassava flour, then dip in almond milk, and finally coat with panko breadcrumbs. 8. Heat oil in a deep fryer to 350°F (175°C). Fry the balls in batches (2-3 at a time) until golden brown and crispy, about 3-4 minutes per batch. 9. Place fried mac 'n' cheese balls on a cooling rack in a warm oven to keep crispy while frying the remaining batches. 10. Serve hot and enjoy! Perfect as a snack or party appetizer.

HealthScore: 70

This recipe scores moderately due to its plant-based ingredients and use of healthier fats like olive oil. However, the deep frying process lowers the score in terms of unhealthy fats and calorie density, and the limited vegetable content reduces the antioxidant and Daily Dozen scores.
