Instructions

1. Heat olive oil and vegan butter in a large skillet over medium heat. 2. Add the minced shallots and sauté until softened, about 2-3 minutes. 3. Add the green peppercorns and cook for another minute. 4. Deglaze the pan with cognac, stirring and letting it reduce slightly. 5. Stir in the non-dairy heavy cream and white miso paste, whisking until the sauce is smooth. 6. Sear the portobello mushrooms on both sides in the sauce for 3-4 minutes until tender and coated with the peppercorn sauce. 7. Plate the mushrooms and top with nutritional yeast and ground flaxseed for garnish. 8. Serve immediately.
