Ingredients

100 g fine soy granules or 500 g fresh vegan mince, 1 onion, finely chopped, 15 g flat-leaf parsley, 1 day-old bread roll, 1 can (230 g) kidney beans, 65 g mustard, 50 g breadcrumbs, 1 tsp sweet paprika powder, Nutmeg, Salt, Pepper, Plant oil for frying

Instructions

If using soy granules, soak them in boiling water for about 10 minutes, then drain and squeeze out excess water. If using fresh vegan mince, no preparation is needed. Chop the onion and parsley finely. Tear the bread roll into small pieces. Drain and rinse the kidney beans. Combine the soy granules or vegan mince, onion, parsley, bread, and kidney beans in a bowl. Add mustard, breadcrumbs, and paprika powder, and season with salt, pepper, and nutmeg. Mix well. Shape the mixture into ten patties. Heat plant oil in a pan over medium heat and fry the patties for 5-7 minutes on each side until browned and crispy. Drain on kitchen paper and serve immediately.
