Instructions

1. **VeganWTF Shortcut**: Skip to Step 4 if you're using store-bought Mexican microwavable rice. 2. Marinate the mushrooms, vegan bacon, and jalapeños in the BBQ-Sriracha sauce mixture (BBQ sauce, sriracha, chilli oil, agave syrup, bitters, and balsamic vinegar) for 5 minutes. 3. Heat a skillet over medium-high heat and sauté the marinated mixture, using a heavy stone or pan to press down and remove moisture from the mushrooms as they cook. Sauté until the mushrooms are tender and slightly crisp, then set aside. 4. Toast the tortillas on both sides in the same pan. 5. Once the tortillas are toasted, sprinkle vegan cheese over one side. Add the BBQ-glazed mushroom and bacon mixture on top, then fold the tortilla in half. 6. Serve hot with microwavable Mexican rice for a complete meal.
